Cincinnati Chili

Ingredients
  

  • 4 Cups Water
  • 2 lbs Lean Hamburger
  • 1 tsp Cinnamon
  • 1 Large Chopped Onion I put the onion in a food processor
  • 1 tsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 2 tbsp Chili Powderoz
  • 1 tsp Black Pepper
  • 1/2 tsp Red Pepper
  • 1 tbsp Salt
  • 1-1/2 tsp Ground Allspice
  • 1 6 oz Can Tomato Paste
  • 1-1/2 tbsp Cider Vinegar
  • 3 Large Whole Bay Leaves
  • 1 tbsp Hershey's Cocoa Mix This is the Secret Ingredient

Instructions
 

  • Crumble raw (Do not brown) hamburger into the water
  • Add all of the ingredients
  • Bring to a boil
  • Simmer for 3 hours
  • Cook 1 box of Angel Hair pasta
  • Remove the bay leaves from the sauce
  • You are now ready to plate

If you have never tried Cincinnati Chili you have no idea what you are missing. This recipe is the Skyline type chili but in this guys opinion so much better. I have been making this for 20 years and have it perfected. Make sure you don’t forget to add the SECRETE INGREDIENT!

AOD CHILI SOUP

This is one of AOD’s Favorite Fall meals. We have also been known to cook this over an open fire as well but we mostly cook it over the stove. I mentioned the cook time is 60 minutes and it will be ready in that time but it is best if this simmers for about 3-4 hours.

Ingredients
  

  • 1 PK Chili seasoning AOD uses McCormick Original Chili Seasoning 1.25oz
  • 2 TBSP Chili Powder
  • 1 Pound Ground Beef
  • 1 Pound Ground Sausage AOD uses Bob Evans Sausage
  • 3 Cans Your Favorite Beer
  • 1 Can 6 oz Can Tomato Paste
  • 2 Cans 12 oz Can Tomato Sauce
  • 1 Can 10 oz Can Ro-Tel Original Tomato Diced Green Chili
  • 1 Med Onion - Diced
  • 4 Med Potatoes Diced 1/2"x 1/2" in size
  • 1 Can 15 oz Can of your favorite Kidney Beans

Instructions
 

  • Start off by dicing the onion and put it in a Large Stock Pot and turn the heat on med/high
  • Drop in the 1 pound of ground beef and also the 1 pound of sausage and begin to brown. Once it is browned you will need to drain off the grease.
  • Next add the pack of chili seasoning  (Don’t Stir yet)
  • Open two beers and add it to the pot. Turn the heat up to high.
  • Next add the tomato paste, tomato sauce & Ro-Tel
  • You can now add your last can of beer.
  • It is now time to add your chili powder  to taste
  • Now carefully drop in your diced potatoes (You will thank me later)
  • Last add your kidney beans
  • Make sure you stir everything at this point
  • Cover with a lid and bring it all to a boil.
  • If you are going to cook the Chili for a few hours once it boils turn down and let it simmer.
  • If you would like to eat this dish in an hour leave on high temperature and stir often for about 30-45 minutes and then turn down to a simmer.

Notes

Key Ingredient – I know this sounds like a simple Chili Recipe that is just like everyone else’s but without the beer it would be. Trust Me when I say don’t forget to add the Beer 
Bonus Tip – I have been known to add Chorizo to this Chili along with the Ground Beef and Sausage. You will not be disappointed.
When you are ready to eat make sure to add your favorite Cheese, Sour Cream,  Crackers,  Tortilla Strips or whatever you like to add to your chili.

Chili Party – If you are looking for an easy meal for that fall Saturday night tailgate party. You can’t go wrong with a chili party. TRUST ME when I tell you it is really good. Make the above base chili recipe over an open fire with a large stock pot. If you have more people coming you can double the recipe. Ask your guests to each bring 2-3 servings of their favorite chili and as they get there add it to your base chili you have been cooking over the open fire. Once the last guest arrives and you add their chili let it cook for about 30-45 minutes while you enjoy the game and a few of your favorite outdoor beverages. Once it’s done you can add whatever you like to the chili and ENJOY!!!

AOD Low Country Crab Boil

We like to do this AOD Crab Boil over the open fire but you can do it on your grill or stove if you do not want to use the open fire.

Ingredients
  

  • 1 Cup Old Bay Seasoning
  • 8 Pounds Red & White Potato Mixture
  • 36 Ears Mini Corn on the Cob
  • 3 Packs Smoked Sausage Packs are 2 Pounds each
  • 15 Pounds Frozen Snow Crab Legs You can get 5 pound boxes at Sam's or Cosco

Instructions
 

  • Make sure you lay out your crab legs to start thawing out
  • Get your fire started
  • Fill up the largest stock pot you have with water, it is a lot easier if your stock pot has a basket. We used a 60 quart. If you do not have a stock pot that large you could use your stock pot from a turkey fryer. You will not be able to cook the crab all at once which is fine. 
  • Add your Old Bay Seasoning
  • Bring the water come to a boil
  • While you are waiting on the water to come to a boil you will want to Par Boil your potatoes on the stove. Cook them for 20 min.
  • Cut your Smoked Sausage into 2 or 3 inch pieces.
  • Once your water over the open fire has come to a boil add the Potatoes, Corn and Smoked Sausage and cook for 10 to 15 minutes.
  • You are now ready to add your Crab Legs, dump them into the pot and you really want to just let them steam since they are pre-cooked. We cooked them for 12 minutes or until they turn pink. 
  • Cover a table outside with craft paper and when the boil is ready take out the basket and let drain. Dump the basket on the table. 

Notes

You are now ready to enjoy a delicious meal with friends and family. 
Side Note -
We do the shrimp as a separate dish (it’s an old secret family recipe) but you could add shrimp to this boil if you choose to.
